I den tamilske kulturarv er Ammikallu et av de mest betydningsfulle symbolene. Denne treadisjonelle kjøkkenredskapet(Krydderkvern eller grinder oppgave) er ofte kalt Ammi (அம்மி). Den består av en flat stein med rektangulær form som er laget av en svær robust steintype som kalles for granitt. For å bruke Ammi er det en rullestein som heter Khulavi. Khulavi er også laget av granitt. Disse to er nesten umulig å skille fra hverandre, de er designet får å arbeide sammen helt perfekt. Prosessen med å male ingredienser på Ammi med hjelp av Khulavi (குழவி) heter &amp;quot;Ammikall araiththal&amp;quot;.&lt;br /&gt;
&lt;br /&gt;
Ammikall har bredt bruksområdet, ikke bruker bare i matlaging men det bruker for å lage tamilsmedisin og helsekost. I matlaging er den viktig i både male og å blande harde ingredienser. Dette gjør dem mye mer mykere og mye mer smakfulle. Tradisjonelt blir brukt krydder, urter og flere andre råvarer som maler på Ammi for å fri deres fullstendige smak og aroma. Dette gjør maten rikere i smak og gir mer autentisk smak, sammenlignet med moderne elektriske kjøkken og kjøkkenmaskiner. I tillegg til dette brukes Ammi også til å tilbrede medisiner og andre helseproblemer. Granitten sin naturlige egenskaper sikrer at ingrediensene males til en fin konsistens uten å forurense av flere skadelige og farlige stoffer.&lt;br /&gt;

Prosessen med å lage Ammi og Khulavi er omhyggelig men krever også dyktighet. Granittblokker hugges og formes til de ønskede sin ønske. For å øke friksjon og redusere nesten all glatthet, pleier overflaten å bli prikket med veldig skarpe verktøy. Dette gjør at ingrediensene kan males bedre og effektivt utenatt de glir av steinen.&lt;br /&gt;

Bruken av Ammi er lett, men det krever litt kraft. Ingrediensene plasseres på overflaten til Ammien, og Khulavi beveges fram og tilbake over dem med hendene for å male dem. Denne sammensatte bevegelsen bryter ned ingrediensene til en bedre konsistens, samtidig som det gir bra treningsøkt for armene.  Ammikall finnes fortsatt i kjøkkenet til mange tamilske hus, spesielt blant i Eelam Tamilere, selv om bruken har avtatt med fremkomsten av moderne elektriske apparater. Likevel de som fortsatt bruker Ammi og Khulavi, mener at smaken på ingrediensene som er malt på denne tradisjonelle måten er uovertruffen.&lt;br /&gt;

Ammikall pleier normalt å veie mellom 30 til 60 kilo, dette er avhengig av størrelsen og tykkelsen på steinen. Til tross for vekten, er den et praktisk redskap i mange hjem. Tamilere som bor i Norge og andre deler av verden, har bevart bruken av Ammi som en måte å holde kontakt med sine kulturelle røtter.&lt;br /&gt;
